12.1 — Food and Drink, and Where They Came From

Almost every dish that defines a country is younger than the country, and most of the ingredients arrived from somewhere else within the last five hundred years.

Which foods are not from where you think?

Reset your mental map using the Columbian Exchange from 2.2. Everything in this list came from the Americas and reached the rest of the world after 1492.

Chillies — so there were none in Indian, Thai, Sichuan or Korean food before the sixteenth century. Heat in Indian cooking came from black pepper, long pepper and ginger. Tomatoes — so no Italian tomato sauce, and Italians were suspicious of them for two centuries because they are related to deadly nightshade. Potatoes — so no Irish potato, no French fries, no aloo. Maize, cacao, vanilla, peanuts, cashews, pineapple, papaya, guava, avocado, pumpkin, and most beans.

Going the other way, the Americas received wheat, rice, sugar cane, coffee, bananas, citrus, cattle, pigs, chickens and horses.

Coffee is African — from Ethiopia, spread through Yemen. Tea is Chinese. Bananas are South East Asian. Sugar cane is from New Guinea. Oranges are from southern China and reached Europe through Persia and Arabia, which is why the word travelled with the fruit, per 9.4.

The general lesson: a national cuisine is a record of trade routes, not of local botany.

Why did Europe want spices so badly?

Not to preserve rotten meat, which is the story taught in schools and is false in both halves.

Spices were far more expensive than meat. Anybody who could afford pepper could afford fresh meat, and preservation was done with salt, smoking and drying, which worked and cost almost nothing. There is no evidence spices were used to mask spoilage, and the recipes of the period do not read that way.

The actual reasons were medicine and status. Medieval European medicine ran on humoral theory, in which spices were classified as hot and dry and prescribed to balance the body. And they were the most conspicuous luxury available — a substance you could consume, that came from an unimaginable distance, and whose price announced itself.

Pepper alone reshaped world history. It grew on the Malabar coast, and the Portuguese, Dutch and English East India Companies were founded to get to it, per 2.3. The search for a sea route to the spice ports is why Europeans arrived in Asia and in the Americas at all.

Everyday things

How did coffee happen?

The plant is Ethiopian, and the traditional story credits a goatherd named Kaldi who noticed his goats becoming lively after eating the berries. The story first appears in writing in 1671, eight centuries after the events it describes, so treat it as folklore.

What is documented is that coffee was being cultivated and traded in Yemen by the fifteenth century, drunk by Sufi orders to stay awake for night prayers, and that it spread from the port of Mocha through the Ottoman world.

The coffee house is the interesting part. Coffee houses in Cairo, Istanbul, Oxford and London became places where people of different classes sat together and talked, which alarmed authorities repeatedly — they were banned or restricted in Mecca in 1511, in Ottoman Istanbul, and in England by a royal proclamation in 1675 that was withdrawn within days after protest.

Lloyd's of London began as a coffee house where shipowners and underwriters met; so did the London Stock Exchange, at Jonathan's. A drink that keeps people awake and sober, served in a room where strangers talk, turns out to be an institution-forming technology.

The roast is where the flavour comes from: a green coffee bean tastes of almost nothing, and roasting runs the Maillard reactions from 4.2 plus caramelisation, producing something over 800 aroma compounds.

Arabica is about 60 to 70 per cent of world production, more delicate and lower in caffeine; robusta is hardier, higher in caffeine, harsher, and is what most instant coffee and much espresso blending uses.

And tea?

Chinese, cultivated for at least two thousand years, and all true tea is one plantCamellia sinensis. Green, oolong, black and white tea differ only in processing.

The variable is oxidation. After picking, the leaves' cell walls are broken and enzymes react with oxygen, darkening the leaf and changing the flavour — the same enzymatic browning as a cut apple. Green tea is heated immediately to kill the enzymes, so oxidation never starts. Black tea is allowed to oxidise fully. Oolong is stopped partway. Pu-erh is different again: genuinely fermented by microbes, and aged.

Herbal "teas" are not tea, since they contain no Camellia.

Tea reached Britain in the seventeenth century and became a national habit for economic reasons: the East India Company had a monopoly on it, and the government taxed it heavily. The tax is why the American colonists threw it into Boston harbour in 1773, and the Company's need to balance its tea purchases from China is what drove the opium trade and the wars that followed.

Indian tea cultivation was established by the British in Assam from the 1830s specifically to break Chinese supply, after a native Assamese tea plant was identified. The masala chai that now reads as ancient Indian tradition is a twentieth-century development, promoted by the Indian Tea Board to build a domestic market, since Indians did not drink tea in quantity before that.

Why is bread the way it is?

Because of a fungus that produces gas and a protein that traps it.

Wheat flour contains two proteins, glutenin and gliadin, which combine with water to form gluten — an elastic network. Kneading develops it. Yeast, a single-celled fungus, ferments sugars in the dough and releases carbon dioxide, and the gluten network traps the bubbles, which is why the loaf rises.

Only wheat and to a lesser extent rye form gluten strongly enough for a risen loaf, which is why every leavened bread tradition in the world sits on wheat, and why rice and maize cultures make flatbreads, steamed cakes and noodles instead.

Sourdough uses wild yeasts and lactic acid bacteria already present on the grain and in the air rather than commercial yeast. The bacteria are what make it sour, and they also make it keep longer and, by some evidence, easier to digest.

Dishes with disputed origins

Where is chicken tikka masala from?

Almost certainly Britain, and the claim is contested in a way that is itself informative.

The dish does not appear in Indian culinary literature before the late twentieth century. Multiple Glasgow restaurateurs have claimed to have invented it — the best-known account is of a chef adding a tin of tomato soup and spices to tandoori chicken because a customer complained it was dry.

Tikka itself is genuinely Indian; the gravy is the addition. A British foreign secretary called it "a true British national dish" in 2001, which annoyed a great many people on both sides.

The general pattern is normal rather than scandalous. Vindaloo comes from Portuguese carne de vinha d'alhos, meat in wine and garlic, adapted in Goa with palm vinegar and chillies. Balti, jalfrezi in its restaurant form, and the standard British curry-house menu are diaspora inventions.

The same is true everywhere. California rolls were invented in North America because Western diners disliked visible seaweed, which is why the nori is on the inside. General Tso's chicken is Taiwanese-American. Fortune cookies are Japanese-American and are not eaten in China.

Which national dishes are surprisingly recent?

Pizza margherita is dated by tradition to 1889 and a visit by Queen Margherita of Savoy, which is probably a marketing story, but the timeline is roughly right — and pizza was a poor Neapolitan street food that became Italian-national only after it returned from America in the mid-twentieth century.

Sushi as it is now eaten is a nineteenth-century Tokyo fast food. The older form was fish preserved in fermenting rice, where the rice was discarded.

Butter chicken was invented in Delhi in the 1940s at Moti Mahal, as a way of using leftover tandoori chicken — the same origin logic as tikka masala.

Croissants are Austrian, brought to Paris by a Viennese baker in the 1830s, which is why they are classed in France as viennoiserie.

And samosas came from Central Asia and Persia with traders and travellers, arriving in India by the thirteenth century, which is why versions of them run from Egypt to Uzbekistan to Bengal.

Drink

Why does alcohol exist in every culture?

Because fermentation happens by itself, and any society storing fruit or grain will discover it without trying.

Yeasts are everywhere. Left with sugar and water in the absence of much oxygen, they produce ethanol and carbon dioxide. Somebody left fruit in a container and it happened, independently, in every part of the world with agriculture.

Beer may predate bread. The "beer before bread" hypothesis argues that grain was first domesticated for fermentation rather than for baking, and while it is not settled, the earliest evidence of both is close in time, and Mesopotamian records include beer rations as wages.

Distillation is much later, developed in the Islamic world for chemistry and medicine — the words alcohol and alembic are Arabic — and applied to spirits in Europe from the twelfth century onward.

Wine grapes were domesticated in the Caucasus around 6000 BCE, with the earliest known winemaking residues from Georgia.

Why do most cultures have a caffeine drink?

Because caffeine is produced independently by unrelated plants on several continents, and every population that met one adopted it.

Coffee in Africa, tea in China, cacao in Mesoamerica, guarana and yerba mate in South America, kola in West Africa. These plants are not related and evolved caffeine separately — as an insecticide, which is what it does at plant concentrations.

Caffeine works by blocking adenosine, a molecule that accumulates during waking and produces the feeling of tiredness by binding to receptors in the brain. Caffeine fits the same receptors without activating them, so it does not add energy — it blocks the signal reporting the absence of it. The adenosine keeps accumulating, which is why the tiredness arrives all at once when the caffeine clears.

Its half-life is about 5 hours, so a coffee at 4 PM leaves a quarter of the dose in your system at midnight. That is the single most useful practical fact about it.

Cooking

What actually happens when you cook food?

Four things, and knowing which one you are doing explains most cooking advice.

Proteins denature — their folded structures unwind and re-link, which is why an egg white turns from transparent liquid to opaque solid, and why overcooked meat is tough: the protein network contracts and squeezes water out.

Starches gelatinise — granules absorb water and swell, which is what makes rice, potatoes and pasta edible, and the reverse process is what makes bread go stale, per 1.2.

Water leaves, which concentrates flavour and eventually allows the surface to exceed 100 °C.

And then Maillard and caramelisation happen, which is where most of the flavour comes from.

Almost every technique is a way of controlling which of these happens where. Searing then slow-cooking: brown the surface, then hold the interior below the temperature that toughens it. Blanching: gelatinise and set colour without over-denaturing. Resting meat: let the contracted proteins relax so the juices redistribute rather than running out.

Why is monosodium glutamate treated as suspicious?

Because of a letter to a medical journal in 1968 and a very long tail of unexamined repetition.

MSG is the sodium salt of glutamic acid, an amino acid that occurs naturally in tomatoes, parmesan, mushrooms, soy sauce, seaweed and human breast milk. It provides umami, the fifth basic taste, identified in 1908 by the Japanese chemist Kikunae Ikeda, who isolated it from kombu.

The 1968 letter described symptoms after eating at Chinese restaurants and speculated about several causes including MSG. It was anecdotal, it was not a study, and the phrase attached to it — "Chinese restaurant syndrome" — is now widely recognised as having been carried by racial prejudice as much as by evidence.

Controlled double-blind trials have consistently failed to reproduce the effect. Regulatory bodies including the US FDA and the European authorities classify it as safe. A small number of people report sensitivity at high doses on an empty stomach, which is a real finding and is a long way from the reputation.

The instructive part is how durable the story has been. A single unverified letter produced a food scare that survived five decades of contrary evidence, largely because the label was memorable and the cuisine was unfamiliar.
